Avocados Lover Burrito Bowl

Ingredients
½ red onion
2 cloves of garlic
1-2 avocado
2 tbsp. olive oil
1/2 sweet potato
2 cups spinach
½ cup black beans
2 limes
Cilantro
½ cup cherry tomatoes
salt and pepper
smoked paprika
cumin
Directions
1. Heat a stovetop pan with ½ tbsp. olive oil.
2. Dice sweet potato and place in pan. Stir the potato so each piece is evenly covered with olive oil. Season with smoked paprika, pinch of cumin and salt & pepper. Cover with a lid and turn temperature to med-low.
3. Dice onion, garlic, cherry tomatoes and 1 avocado.
4. In a blender, combine both cloves of garlic with ¼ of the red onion, 1.5 tbsp. olive oil and the diced avocado. Add 4 leaves of cilantro, the juice of a full lime and a touch of water until it creates a thicker consistency. Season the dressing with salt and pepper and pulse 1-2 more times.
5. Open and drain the can of black beans.
6. In a large bowl, add your greens of choice and lightly season with salt and pepper. Top the greens with the other ¼ of red onion, the diced tomatoes and black beans.
7. Once the sweet potato has softened, remove from heat and add to the bowl.
8. Slice the second avocado and place on top of the greens.
9. Add your desired amount of dressing to the greens, mixing thoroughly.
10. Squeeze the juice from the second line into the salad, and season with salt and pepper.
11. Enjoy!
