Chicken or Cauliflower Parmesan

Do you have both vegetarian and meat eaters at your home? No problem with this dinner, twist up of chicken Parmesan or cauliflower. You might be surprised how much you love the cauliflower version!






Ingredients:

2 Eggs - add more if you need

Minced garlic

Bread Crumbs

Chicken Breast (4) or Cauliflower Head

Spices of your choice such as: basil, garlic (or onion) powder, parsley, salt, pepper

Flour (for cauliflower)

½ cup Cooking Oil: I used canola oil, olive oil works well too.

Your favourite marinara

Grated Parmesan and Mozzarella Cheese

Side options: pasta, steamed or pan-fried veggies such as mushrooms or peppers, mashed potatoes.

Directions: Chicken

  1. For chicken, preheat the oven to 430°F. Lightly grease an oven tray or line with parchment paper.

  2. In a bowl, whisk eggs, garlic powder, parsley, salt and pepper. Coat each chicken breast and allow it to marinate for at least 15 minutes.

  3. When ready to cook, heat oil (just enough to cover the entire bottom of your pan) in a pan at medium-high heat. Mix bread crumbs and spices of your desire. Evenly coat chicken breasts in bread crumb mixture and fry for about 4-5 minutes on each side.

  4. Place the chicken on the oven tray and top with marinara, mozzarella and parmesan. Top with basil or parsley. Bake for 15-20 minutes or until the cheese is melted and bubbling.

Directions: Cauliflower

  1. Preheat the oven to 425°F

  2. Wash cauliflower head and cut into two bite sized pieces.

  3. In three bowls, make the same bread crumb mixture in one bowl, add the two eggs in another, and then add some flour to the third. Measurement is not specific as you can add more of these ingredients as you go to avoid waste.

  4. Heat oil the same way as you would for the chicken.

  5. For each piece of cauliflower, coat in flour, then egg, then bread crumbs. Gently place into heated oil and fry until golden.

  6. Place all fried cauliflower pieces on an oven tray prepared the same way as for the chicken and spread a thin layer of marinara. Top cauliflower with marinara, cheeses, and spices.

  7. Bake for 20-30 minutes or until between tender and crisp (stab with a fork to check this)

Tip: For the breading process, I like to set the chicken or cauliflower in the bowl and use a spoon to scoop bread crumbs onto the chicken or cauliflower. This way your fingers don’t get messy and it helps with less waste!
